Ingredients
- 1 cup Northerly rolled oats
- 2 cups water
- ¼ tsp. salt, more to taste
- Pepper to taste
- Toppings (per bowl):
- 1 cup sautéd kale
- 1/2 cup sliced mushrooms
- 2 eggs, cooked to preference
- ½ avocado, sliced
- ⅛ cup diced green onion
- Cayenne pepper to taste

How to make it

- In a large pot, bring salt and water to a boil.
- Stir in oats and reduce heat to medium-low.
- Cook, stirring occasionally for 5 minutes or until oats reach the desired consistency.
- While the oats cook, prepare the kale, eggs, and any other toppings.
- Once the oats are cooked, remove from heat and separate oats into two bowls.
- Top each bowl with an egg, kale, mushrooms, green onions, and season with salt and pepper to taste!
Toppings
- Slice an avocado lengthwise
- Heat olive oil in your saucepan over medium-high. Add garlic if desired. Add mushrooms and kale. Cook for 5 minutes. Season with salt and pepper.
- Cook eggs to your preference. We like fried eggs best, but scrambled, soft-boiled, or poached will also be delicious.
- Thinly dice a green onion
