Ingredients

  • 1 cup Northerly rolled oats
  • 2 cups water
  • ¼ tsp. salt, more to taste
  • Pepper to taste
  • Toppings (per bowl):
    • 1 cup sautéd kale
    • 1/2 cup sliced mushrooms
    • 2 eggs, cooked to preference
    • ½  avocado, sliced
    • ⅛ cup diced green onion
    • Cayenne pepper to taste

Prep time

15 minutes | serves 2

 

How to make it

    1. In a large pot, bring salt and water to a boil.
    2. Stir in oats and reduce heat to medium-low.
    3. Cook, stirring occasionally for 5 minutes or until oats reach the desired consistency. 
    4. While the oats cook, prepare the kale, eggs, and any other toppings.
    5. Once the oats are cooked, remove from heat and separate oats into two bowls.
    6. Top each bowl with an egg, kale, mushrooms, green onions, and season with salt and pepper to taste!

Toppings

  • Slice an avocado lengthwise
  • Heat olive oil in your saucepan over medium-high. Add garlic if desired. Add mushrooms and kale. Cook for 5 minutes. Season with salt and pepper. 
  • Cook eggs to your preference. We like fried eggs best, but scrambled, soft-boiled, or poached will also be delicious. 
  • Thinly dice a green onion
